Hohenmoorer tri-ply Vegetable knife, 19 cm (7.5")


All Hohenmoorer knives with three-layered laminated steel blades are made by hand. The cutting edge of these blades is forged from a high-carbon steel (1.3%), allowing the blades to be even harder and to retain their sharpness even longer than regular carbon steel knives. The hand-forged three-layered blades provide a perfect combination of an extremely hard high-carbon steel cutting edge sandwiched between two layers of softer mild steel. The hand forging results in a beautiful “cloudy” irregular pattern near the cutting edge where the mild steel outer layers meet with the hard high-carbon steel cutting edge.

The handle is smoked German oak wood treated with hard oil. The blade comes with a pre-patina and protected with tee seed oil, hardness 62–64 HRC.

Hand wash and towel dry, NOT dishwasher safe.  Not stocked, special order only.  Allow 6-8 weeks for delivery.
